Temperature, Catalysts and Enzymes

Why does dosa batter rise overnight on the kitchen shelf but hardly at all in the fridge? Why does a glowing incense stick suddenly blaze when a pinch of black powder is added to hydrogen peroxide? Here are the last two factors that control the rate of reaction, temperature താപനില and catalysts ഉൽപ്രേരകം. You will also meet the threshold energy ത്രെഷോൾഡ് എനർജി, the Haber and contact processes, and the enzymes at work inside your own mouth.

📖 What you need (pages 2, 6 and 7 of this guide)

1. Temperature താപനില – ammonium chloride and sodium hydroxide

Let us examine the reaction between ammonium chloride (NH₄Cl) and sodium hydroxide (NaOH). Q (page 106). Which products form when they react? Look at the equation:

NH4Cl + NaOH → NaCl + H2O + NH3↑
Sodium chloride (NaCl), water (H₂O) and ammonia gas (NH₃). The ↑ shows that ammonia escapes as a gas. It is a double decomposition reaction: NH₄⁺ and Na⁺ swap partners, and NH₄OH breaks up into NH₃ + H₂O.

Take 2 mL of ammonium chloride solution in a test tube. Pour into it 2 mL of sodium hydroxide solution taken in another test tube.

⚠️ Ammonia has a strong, choking smell and sodium hydroxide is caustic. Never put your nose over a test tube. Smell a gas only by wafting it gently towards you with your hand (Fig 5.9). Warming is done by the teacher, with the tube pointing away from everyone. Wear goggles.
👃 Virtual lab – Fig 5.9: smell the ammonia safely, cold and warm

Blue dots are ammonia molecules leaving the liquid. The smell meter counts how many reach the nose. The numbers are a model.

Q (page 107). Answer from the experiment:

Did you observe any product forming?
Wave your hand so that air from the mouth of the tube comes towards your nose, as in Fig 5.9. Do you notice any smell?
Warm the test tube and test the smell again. What do you find?
1. No visible change. Both solutions are colourless and the mixture stays clear, because all the products dissolve or are colourless.
2. Only a very faint smell, or none at all. At room temperature very little ammonia forms each second.
3. After warming, the sharp, pungent smell of ammonia അമോണിയയുടെ രൂക്ഷഗന്ധം is strong. The rate increased because the temperature increased.

2. Threshold energy

⭐ Threshold energy (page 107)

For the reactants in a chemical reaction to change into products, the reactant particles need a certain minimum amount of kinetic energy ഗതികോർജം. This energy is called the threshold energy ത്രെഷോൾഡ് എനർജി.

When the reactants are heated, the kinetic energy of the particles increases. So as the temperature rises, the number of particles that reach the threshold energy increases. As a result the number of effective collisions increases and the reaction becomes faster.

The particles in a beaker do not all have the same energy. A few are slow, most are in the middle, and a few are very fast. Move the slider and watch the coloured tail, which shows the particles that have at least the threshold energy.

📈 Energy share lab – how many particles reach the threshold?

The curve is a real energy distribution for gas particles (the Maxwell–Boltzmann shape), with the threshold put at 4 units. The percentages show the trend. They are not the values for any one reaction. K = kelvin; 300 K ≈ 27 °C.

💥 Collision theory: temperature

Heating does two things. The particles move faster, so they collide a little more often. Much more important, a far larger share of the collisions now has at least the threshold energy. In the lab a rise of 60 K nearly doubles the green tail. Real reactions have a much higher threshold, so for them even a 10 °C rise can double the rate. Heating does not lower the threshold energy. It gives more particles enough energy to get over it.

? (page 107). The procedure for the reaction between sodium thiosulphate (Na₂S₂O₃) and hydrochloric acid is given below. Identify, by experiment, the factor that affects the rate.

Prepare a dilute solution of sodium thiosulphate in a beaker. Take equal amounts of it in two test tubes. Warm one test tube for a short time. Pour the same amount of dilute hydrochloric acid into both tubes.

⚠️ This reaction gives off a little sulphur dioxide, a choking gas. Use small amounts in a well-ventilated room, and only gentle warming done by your teacher. Do not smell the tubes.
⏱️ Virtual lab – warm vs cold: which tube turns cloudy first?

The clock in the picture runs 4 times faster than real time. Times are illustrative. A common rule of thumb is that a rise of 10 °C roughly doubles the rate of many reactions.

Q. Record your observation. In which test tube did the precipitate form quickly? Which factor affected the rate here?

The factor that affected the rate here is …

Observation: both tubes slowly turn cloudy, pale yellow. The cloudiness is a precipitate അവക്ഷിപ്തം of sulphur. The warmed tube turns cloudy much sooner.
Precipitate formed quickly in: the warmed test tube.
Factor: temperature താപനില. At the higher temperature more particles have the threshold energy, so there are more effective collisions.
Go further, the equation: Na₂S₂O₃ + 2HCl → 2NaCl + S↓ + SO₂↑ + H₂O.

3. Catalysts ഉൽപ്രേരകങ്ങളുടെ സ്വാധീനം – hydrogen peroxide and manganese dioxide

Have you heard of hydrogen peroxide (H₂O₂)? Its solution in water is used as a disinfectant (antiseptic) in our homes and hospitals, and sanitisers containing hydrogen peroxide were used during the worst of the COVID period. When it undergoes a decomposition reaction വിഘടന രാസപ്രവർത്തനം, hydrogen peroxide sets oxygen free:

2H2O2 → 2H2O + O2↑

Take a little hydrogen peroxide solution in a boiling tube. Hold a glowing incense stick എരിയുന്ന ചന്ദനത്തിരി inside the tube. Then add a little manganese dioxide (MnO₂) മാംഗനീസ് ഡൈഓക്സൈഡ് and bring the glowing stick in again.

⚠️ Lab hydrogen peroxide (stronger than the 3 % antiseptic) irritates skin and eyes, and a glowing stick near extra oxygen can burst into flame. Do this only under your teacher's supervision, with goggles, small amounts, and the tube in a stand.
🔥 Virtual lab – the glowing incense stick, MnO₂ and filtering

Oxygen volumes and masses are illustrative. The tube gets warm, because the decomposition gives out heat.

Q (page 108). Answer from the experiment:

Is there any change in the way the incense stick burns (before MnO₂)?
After adding MnO₂, what did you observe now?
When the reaction is over, the solution is filtered through filter paper. What is the substance left on the filter paper?
1. Hardly any change. Hydrogen peroxide decomposes very slowly on its own, so only a trace of extra oxygen reaches the stick.
2. The liquid froths with oxygen bubbles and the incense stick glows brightly and may burst into flame. The burning of the stick became faster because the decomposition of hydrogen peroxide became faster and released more oxygen. The substance that increased the rate is manganese dioxide.
3. Manganese dioxide, the same black powder. When it is examined carefully, its amount (mass) and properties have not changed.
⭐ Key idea 5 (page 108) – catalysts

Substances that increase the rate of a chemical reaction without themselves undergoing a permanent chemical change are called catalysts ഉൽപ്രേരകം. In the decomposition of hydrogen peroxide, manganese dioxide is used as a catalyst.

🔭 Go further – how does a catalyst work?

A catalyst gives the reaction a different path with a lower threshold energy. At the same temperature, many more particles now have enough energy, so many more collisions are effective. Press "Add a catalyst" in the energy share lab above to see the threshold line move left and the green tail grow. The catalyst takes part along the way but is given back unchanged at the end. That is why a small pinch can be used again and again. A catalyst changes only how fast the products form, not which products form or how much.

4. Catalysts in industry – the Haber and contact processes

Q (page 109). In the same way, can you identify the catalysts in the reactions below? The catalyst is written above the arrow and the conditions below it.

Industrial manufacture of ammonia by the Haber process ഹേബർ പ്രക്രിയ:

N2(g) + 3H2(g) Fe⇌200 atm, 700 K 2NH3(g)

Industrial manufacture of sulphuric acid by the contact process സമ്പർക്ക പ്രക്രിയ, in its key step:

2SO2(g) + O2(g) V2O5⇌2 atm, 720 K 2SO3(g)

The catalyst in the Haber process is …

The catalyst in the contact process is …

Haber process: iron (Fe) at 200 atm and 700 K. Contact process: vanadium pentoxide (V₂O₅) at 2 atm and 720 K.
The sign ⇌ shows that these are reversible reactions ഉഭയദിശാ പ്രവർത്തനങ്ങൾ. Some ammonia breaks back into nitrogen and hydrogen even as it forms, so the reaction goes both ways. Without a catalyst these reactions would be far too slow for a factory. With one, a fertiliser factory (such as FACT at Udyogamandal, near Kochi) can make ammonia fast enough.
⭐ Five factors (page 109)

Besides the nature, concentration and surface area of the reactants, the temperature and the presence of catalysts also affect the rate of reaction.

FactorChange that speeds it upCollision-theory reason
Nature of reactants അഭികാരകങ്ങളുടെ സ്വഭാവംa more reactive substance (Mg rather than Zn, Na rather than Mg)a larger share of collisions is effective
Concentration ഗാഢതmore concentratedmore particles per unit volume → more collisions per second
Surface area പ്രതലപരപ്പളവ്powder or small piecesmore exposed particles → more collisions per second
Temperature താപനിലwarmermore particles reach the threshold energy → more effective collisions (and slightly more collisions)
Catalyst ഉൽപ്രേരകംadd a suitable catalyst(go further) a path with a lower threshold energy → more effective collisions; the catalyst is unchanged at the end

5. Catalysis in nature ഉൽപ്രേരണങ്ങൾ (catalysis) പ്രകൃതിയിൽ – enzymes

Many catalytic processes ഉൽപ്രേരണം take place in nature. In every living cell, thousands of chemical reactions happen at ordinary temperature and pressure. Protein molecules called enzymes എൻസൈമുകൾ speed up these reactions, so they are catalysts. For example, amylase അമിലേസ്, found in saliva, is an enzyme that changes starch അന്നജം into maltose മാൾട്ടോസ്.

🍚 Amylase at work – cutting starch into maltose

Try it: chew a mouthful of plain rice (or a piece of bread) slowly for a minute. It begins to taste sweet, because amylase is turning the starch into maltose, a sugar. Amylase works best at body temperature, about 37 °C. Like every catalyst, it comes out of the reaction unchanged and goes on to the next starch molecule.
