Colloids in Daily Life, Drinks and Food Additives
Milk, butter, jam, smoke, mist, soap lather and the mayonnaise served with alfaham are all colloids. So are many of the drinks you buy on a hot afternoon. On this page you sort colloids by what is spread in what, shake a glass of kulukki sarbath, and compare natural drinks with artificial drinks കൃത്രിമ പാനീയങ്ങൾ. Then you read a drink label for its stabilisers സ്റ്റെബിലൈസറുകൾ, preservatives പ്രിസർവേറ്റീവുകൾ and colours.
- A colloid കൊളോയിഡുകൾ has particles of 1–1000 nm. They cannot be seen with the naked eye, do not settle and pass through filter paper, but they scatter light (the Tyndall effect) (page 7).
- In a suspension സസ്പെൻഷൻ the particles are bigger than 1000 nm and settle on standing.
1. Colloids in daily life നിത്യജീവിതത്തിലെ കൊളോയിഡുകൾ
Colloids have many uses in the modern world. Food production, sewage treatment, making cosmetics, making medicines, oil/water emulsions, mayonnaise, jellies and milk products are all connected with colloids.
Q (page 126). Find out what these are made of, prepare a note and present it in class.
- Food: milk, curd, butter, ghee, cheese, ice cream, jam and jelly, kanji vellam (starch in water), mayonnaise, whipped cream. Most of these are droplets of fat, or clusters of protein, spread in water.
- Milk products: milk is fat droplets and protein in water (an emulsion). Butter is water droplets held in fat. Cheese and paneer are made by making the milk proteins clump together.
- Cosmetics: face creams, lotions, toothpaste, shaving foam and hair gel are emulsions, gels or foams.
- Medicines: many syrups, ointments and eye drops are colloids. The tiny particles spread evenly, so each dose has the same amount.
- Sewage and water treatment: dirty water contains colloidal particles that will not settle. Alum is added (as in the old practice of rubbing alum in a pot of well water). It makes the tiny particles clump into bigger ones, which settle and can be filtered.
- Oil/water emulsions: paints, some polishes and cutting oils in workshops.
Mayonnaise is a soft colloid commonly used in sandwiches and salads. Along with new food habits such as alfaham and grilled chicken, many people eat mayonnaise. It is made from vinegar, vegetable oil and egg white (now often milk instead). If these are not kept clean, or if they become stale, serious health problems, including food poisoning, can happen. You may have noticed such news. When we take up new ways of eating, we must make sure our food is safe.
2. Eight kinds of colloid
Every colloid has two main components: the dispersion medium ഡിസ്പേർഷൻ മീഡിയം and the dispersed phase ഡിസ്പേർസ്ഡ് ഫേസ്. The dispersed phase is spread through the dispersion medium. Colloids have 8 main kinds, which differ in the physical states (solid, liquid, gas) of these two components. Think of milk: tiny fat droplets (dispersed phase) are spread in water (dispersion medium).
Click a cell of the grid, or use the buttons. The picture in each cell is a model: the real particles are far too small to see.

🎯 Colloid matcher. For each everyday colloid, choose its kind. Ask yourself two questions: what is spread? (the dispersed phase) and what is it spread in? (the dispersion medium).
3. Kulukki sarbath and other drinks (Fig 6.9)
Q (page 127). Haven't you seen kulukki sarbath being made at a cool-drinks shop? Which substances are dissolved in it? You will also see that some things do not dissolve. Make one below: add the ingredients, then shake (kulukki).
Not dissolved ലയിക്കാത്തവ: the basil seeds (sabja), the pieces of ice (until they melt) and the lime pieces. These stay as separate bits you can see.
So a glass of kulukki sarbath is a solution with some insoluble things floating in it. It is a heterogeneous mixture overall.
In the hot season we need drinks to quench our thirst. Many of the juices we drink are colloids: the tiny bits of fruit pulp do not settle quickly and they scatter light. Some drinks are natural and some are artificial കൃത്രിമ പാനീയങ്ങൾ.
Q (page 127–128). Find examples of natural drinks: pure water, buttermilk (moru vellam), lemon water, tender coconut water (karikku vellam), ……
Sort it. Is each drink natural or artificial?
Q (page 128). For how long can these natural drinks be kept without spoiling?
Rough, typical times for drinks made cleanly. Real times depend on hygiene and the weather. When in doubt, throw it out.
The juices and drinks sold in the market today have many chemicals added so that they can be kept for a long time without spoiling.
4. Stabilisers
Chemicals added to artificial drinks to prevent the particles from settling are called stabilisers
- Brominated vegetable oil
- Sucrose acetate isobutyrate
- Glyceryl ester of rosin
A model. How a stabiliser works (go further): it makes the tiny droplets of flavour oil about as heavy as the drink itself and keeps them from joining together, so they neither sink nor float.
5. Preservatives പ്രിസർവേറ്റീവുകൾ and other additives
The practice of using some substances to keep food from spoiling has existed from early times. Vinegar and salt are some of them. Substances like these are generally called preservatives പ്രിസർവേറ്റീവുകൾ. Think of Kerala's lime and mango pickles (in salt, oil and vinegar) and salted dried fish (unakka meen). They keep for months because microbes cannot grow in so much salt or acid.
The chemicals used for this either keep the quality of the food or improve its taste. Some chemicals are also added to give artificial drinks attractive colours. Let us meet some of them (Table 6.5).
| Chemical രാസവസ്തു | Drink / food it is added to ചേർക്കുന്ന പാനീയം/ഭക്ഷണപദാർഥം | Use ഉപയോഗം |
|---|---|---|
| Tartrazine ടാർട്രസിൻ | foods, drinks ഭക്ഷ്യപദാർഥം, പാനീയങ്ങൾ | gives a yellow colour മഞ്ഞനിറം നൽകൽ |
| Erythrosine എരിത്രോസിൻ | foods, drinks ഭക്ഷ്യപദാർഥം, പാനീയങ്ങൾ | gives a red colour ചുവപ്പ് നിറം നൽകൽ |
| Indigo carmine ഇൻഡിഗോ കാർമൈൻ | foods, drinks ഭക്ഷ്യപദാർഥം, പാനീയങ്ങൾ | gives a blue colour നീലനിറം നൽകൽ |
| Phosphoric acid ഫോസ്ഫോറിക് ആസിഡ് | artificial drinks കൃത്രിമ പാനീയം | adds a sour taste പുളിരുചി കൂട്ടാൻ |
| Allyl hexanoate അലൈൽ ഹെക്സനോയേറ്റ് | foods ഭക്ഷ്യപദാർഥം | for fragrance (pineapple) സുഗന്ധത്തിനായി (പൈനാപ്പിൾ) |
| Sodium benzoate സോഡിയം ബെൻസോയേറ്റ് | sauces, salads, soft drinks സോസ്, സാലഡ്, സോഫ്റ്റ് ഡ്രിംഗ്സ് | keeps away yeast and moulds യീസ്റ്റ്, പൂപ്പൽ എന്നിവ ബാധിക്കാതിരിക്കാൻ |
Table 6.5 (page 128)
Colours: tartrazine (yellow), erythrosine (red), indigo carmine (blue). Taste and smell: vanillin, phosphoric acid (sour), allyl hexanoate (pineapple). Preservatives (stop spoiling): sodium benzoate, sorbic acid, and of course salt and vinegar. Stabilisers (stop settling): brominated vegetable oil, sucrose acetate isobutyrate, glyceryl ester of rosin.
6. Read the label
Activity (page 129). You can find some of these substances on the labels of drink bottles and packaged foods. Compare them with the information given above. Practise on this made-up label first, then try real bottles at home or in a shop.
SUNNY LEMON
Carbonated soft drink · 300 mL · lemon flavoured
Ingredients: carbonated water, sugar, acidity regulator (338), stabiliser (445), preservative (211), permitted synthetic food colour (102), added flavour (nature-identical lemon flavouring substances).
Contains no fruit.
| Nutrition information | per 100 mL |
|---|---|
| Energy | 44 kcal |
| Carbohydrate | 11 g |
| – of which total sugars | 11 g |
| Protein | 0 g |
| Fat | 0 g |
| Sodium | 10 mg |
Numbers in brackets are INS codes: 338 = phosphoric acid · 445 = glyceryl ester of rosin · 211 = sodium benzoate · 102 = tartrazine. Best before 6 months from manufacture.
Task 1. What job does each ingredient do? Choose for each row and press Check.
Task 2. How much sugar is in the whole 300 mL bottle?
In India, food safety rules (FSSAI, the Food Safety and Standards Authority of India) require packaged foods to list their additives by class (colour, preservative, stabiliser…), usually with an INS number (International Numbering System). So "preservative (211)" means sodium benzoate. The same additive has the same number all over the world.
7. Soft drinks and our health
The habit of drinking soft drinks സോഫ്റ്റ്ഡ്രിങ്കുകൾ is still common among us. They are known as carbonated drinks, fizzy drinks or pop drinks. Many of them are made by passing carbon dioxide through water and mixing in artificial colours, preservatives, sucrose or artificial sugar, caffeine and so on.
The textbook says:
- Artificial sweeteners can stimulate our taste buds and create a feeling of wanting to eat more sweet things.
- Aspartame, saccharin and fructose corn syrup are many times sweeter than ordinary sugar and comparatively cheap. The book calls them the main "villains" among sweeteners.
- Although they have a lower calorific value than sugar, they cause various health problems by increasing triglycerides in the blood and the production of bad fats (cholesterol).
- Their regular use may cause non-alcoholic liver cirrhosis and increased hunger.
- Such sweeteners raise the level of uric acid in the blood and lead to other diseases.
- Some studies point out that drinking too many soft drinks causes obesity and tooth decay.
These statements are given here exactly as the textbook makes them. This guide does not give medical advice. If you have a question about your own health, ask a doctor.
Q (page 129). Do artificial drinks have nutritional value? Discuss.
Compare natural drinks: tender coconut water has potassium and other minerals; buttermilk has protein and calcium; fresh fruit juice has vitamin C and other vitamins. So natural drinks are the better choice to quench thirst.
Q. Many of these are harmful to health. How does adding such chemicals to food and drinks affect the body? Collect information.
- Start with what the textbook says (the soft-drinks box above): too much sugar or artificial sweetener, increased blood triglycerides, bad fats and uric acid, liver problems, increased hunger, obesity and tooth decay.
- Collect 5–6 labels of drinks and packaged snacks. List every colour, preservative, stabiliser and sweetener, with its INS number.
- Use reliable sources: your science teacher, the school doctor or health inspector, the FSSAI website (see "Explore online" below), and newspaper reports about food-safety raids in Kerala.
- Note that additives are allowed only in limited amounts by food-safety law. Problems come from taking too much, from banned colours, and from food that is stale or unhygienic.
8. Seminar and debate support
The book asks you to organise debates and seminars on this. Here is a starter kit.
🎤 Seminar plan (8–10 minutes)
- Opening: a show of hands – who had a bottled drink this week?
- What is in a drink? Read a label aloud: water, sugar, colour, acid, flavour, preservative, stabiliser.
- Why each is added: use Table 6.5 and the stabiliser box.
- Health: the points from the soft-drinks box, as the textbook states them.
- Natural alternatives: karikku vellam, sambharam, fresh juice, lime water, jeerakavellam.
- Closing: three tips – read labels, choose fresh drinks, drink plenty of clean water.
⚖️ Debate: "Natural drinks are better than artificial drinks"
For the motion:
- Natural drinks carry vitamins, minerals and protein; artificial drinks are mostly sugar.
- No added colours, preservatives or sweeteners.
- Cheaper and local: they support Kerala farmers; no plastic bottles.
Against the motion (argue it fairly):
- Bottled drinks are sealed, so they are safe from germs for months; natural drinks spoil within hours.
- Additives are permitted in limited amounts by food-safety law.
- A fresh juice made with dirty water or ice can also make people ill.

9. Check yourself
- Colloids are used in food, medicines, cosmetics, sewage treatment, emulsions, mayonnaise, jellies and milk products. Mayonnaise (vinegar + vegetable oil + egg white or milk) must be kept clean and fresh, or it can cause food poisoning.
- A colloid = a dispersed phase ഡിസ്പേർസ്ഡ് ഫേസ് spread in a dispersion medium ഡിസ്പേർഷൻ മീഡിയം. There are 8 kinds: solid sol (gems), gel (butter, jam, cheese), solid foam (rubber mattress), sol (kanji vellam), emulsion (milk, paint), foam (soap lather), aerosol (smoke, dust), liquid aerosol (mist, clouds).
- In kulukki sarbath, sugar, salt and lime juice dissolve; basil seeds, ice and lime pieces do not.
- Natural drinks spoil within hours to a day. Artificial drinks contain added chemicals: stabilisers stop particles settling, preservatives (vinegar, salt, sodium benzoate, sorbic acid) stop spoiling, and colours and flavours are added too (Table 6.5).
- Soft drinks are carbonated water with colours, preservatives, sugar or artificial sweeteners and caffeine. They have little nutritional value, and the textbook warns of several health problems.
